For the Chocolate Coating:
- 24 whole almonds
 - 1 1/2 cups semi-sweet chocolate chips
 - 1 tablespoon coconut oil
 
Instructions
- Mix Coconut Filling: In a medium bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract until sticky.
 - Shape Coconut Bites: Form mixture around almonds, creating small balls or ovals. Freeze for 20–30 minutes.
 - Melt Chocolate: In a microwave-safe bowl, melt chocolate chips and coconut oil in intervals. Dip coconut bites in chocolate.
 - Chill and Serve: Refrigerate until chocolate sets, about 20 minutes. Serve chilled or at room temperature.
 
Notes
- Store in the refrigerator for up to 1 week or in the freezer for up to 2 months.
 - Dark chocolate can be used for a richer flavor.
