Description

Australian Busters are crunchy, Aussie-style cookies that are perfect for a sweet treat. These coconut and oat cookies are easy to make and have a delightful golden syrup flavor.

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup desiccated coconut
  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup brown sugar, packed
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter
  • 2 tablespoons golden syrup (or light corn syrup)
  • 2 tablespoons boiling water
  • 1/2 teaspoon baking soda


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine dry ingredients: In a large bowl, mix the flour, coconut, oats, brown sugar, and salt.
  3. Prepare wet mixture: In a small saucepan, melt the butter and golden syrup over low heat. Dissolve baking soda in boiling water, then add to the butter mixture.
  4. Mix the dough: Combine wet and dry ingredients, then scoop tablespoon-sized portions onto the baking sheet.
  5. Bake: Flatten the cookies and bake for 10-12 minutes until golden brown.
  6. Cool: Allow the cookies to cool on the baking sheet before transferring to a wire rack.

Notes

  • These cookies are similar to ANZAC biscuits.
