Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and vegetables evenly.
  2. Prepare Seasoning Mix: In a small bowl, whisk together the olive oil, lime juice, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, optional cayenne pepper, salt, and black pepper until well combined.
  3. Season Chicken: Place the chicken breasts in a large baking dish. Rub both sides of each chicken breast thoroughly with the prepared seasoning mixture to ensure full flavor penetration.
  4. Add Vegetables: Scatter the sliced red, yellow, and green bell peppers along with the sliced red onion evenly around and over the chicken breasts in the baking dish.
