Instructions
- Heat the olive oil and cook chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken strips seasoned with salt and pepper. Sear the chicken for 5–6 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the sliced bell peppers and red onion. Sauté for 5–6 minutes until they are slightly softened and vibrant in color.
- Add garlic and cook: Add minced garlic to the skillet and cook for an additional minute, stirring frequently to release its aroma.
- Prepare and add the sauce: In a small bowl, whisk together balsamic vinegar, honey, soy sauce, and dried Italian seasoning. Pour this mixture into the skillet over the vegetables and stir well to coat everything evenly.
- Combine chicken with vegetables and sauce: Return the cooked chicken strips to the skillet. Toss everything together to combine and cook for another 2–3 minutes until heated through and the sauce has slightly thickened.
- Garnish and serve: If desired, garnish with fresh basil or parsley. Serve the balsamic chicken and peppers over your choice of rice, quinoa, or pasta for a complete meal.
