Instructions

  1. Combine Chicken and BBQ Sauce: In a bowl, mix the shredded cooked chicken with the BBQ sauce until the chicken is thoroughly coated for flavorful filling.
  2. Butter the Bread: Spread softened butter on one side of each slice of bread to achieve a crispy golden exterior when grilled.
  3. Preheat Skillet: Heat a large skillet or griddle over medium heat to ensure even cooking.
  4. Assemble Sandwich: Place one slice of bread, butter side down, onto the skillet. Layer with 1/4 cup shredded cheese, 1/4 cup of the BBQ chicken mixture, optional thinly sliced red onions, fresh cilantro, and another 1/4 cup of shredded cheese on top.
  5. Top with Bread: Add another slice of bread on top with the buttered side facing up.
  6. Cook the Sandwich: Cook until the bottom slice is golden brown and the cheese begins to melt, approximately 3-4 minutes. Flip carefully and cook the other side until golden brown and the cheese is completely melted, another 3-4 minutes.
