Blackberry Layer

  • 1 ½ cups fresh or frozen blackberries
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lime juice

Pineapple Layer

  • 1 ½ cups pineapple chunks (fresh or canned, drained)
  • 1 tablespoon honey or maple syrup

Coconut Layer

  • ½ cup full-fat coconut milk
  • ½ teaspoon vanilla extract


Instructions

  1. Prepare Blackberry Puree: In a blender or food processor, combine blackberries, 1 tablespoon honey or maple syrup, and lime juice. Blend until smooth. For a seedless texture, strain the mixture through a fine mesh sieve. Set aside the blackberry puree.
  2. Prepare Pineapple Puree: Rinse the blender to remove blackberry residue. Blend pineapple chunks with the remaining 1 tablespoon honey or maple syrup until smooth. Set aside the pineapple puree.
  3. Prepare Coconut Mixture: In a small bowl, stir together coconut milk and vanilla extract until well combined.
  4. Assemble Popsicles: In popsicle molds, layer the blackberry puree, followed by the pineapple puree, then the coconut mixture. Alternate layers as desired, then swirl gently with a skewer or toothpick to create a marbled effect.
  5. Freeze: Insert popsicle sticks and freeze the molds for at least 6 hours or until completely solid.
  6. Remove and Serve: To unmold, briefly run the popsicle molds under warm water for a few seconds. Gently pull out the pops and enjoy immediately.
