			Oils
- 2 tablespoons sesame oil
 - 2 tablespoons vegetable oil

Main Ingredients
- 4 cups cooked rice, cooled
 - 3 tablespoons soy sauce
 - 1 teaspoon salt
 - 1 teaspoon black pepper
 - 1 cup frozen peas and diced carrots blend
 - 3 large eggs, lightly beaten

Instructions
- Preheat the griddle: Preheat your Blackstone griddle over medium-high heat to ensure it reaches the ideal temperature for cooking fried rice evenly and achieving a slight crisp.
 - Add oils: Add the sesame oil and vegetable oil to the hot griddle surface, distributing evenly for maximum flavor and to prevent sticking.
 - Cook scrambled eggs: Pour the beaten eggs onto one side of the griddle and scramble gently until just cooked, then push the eggs to the side to make space for vegetables and rice.
 - Sauté vegetables: Add the frozen peas and diced carrots blend to the other side of the griddle and sauté for 2–3 minutes, stirring occasionally, until they are heated through and slightly tender.
 - Add rice and crisp: Spread the cooled cooked rice evenly over the griddle. Let it cook undisturbed for a few minutes to allow the bottom layer to crisp slightly, adding texture to the dish.
 - Combine ingredients: Mix the scrambled eggs, sautéed vegetables, and rice together on the griddle to combine all components evenly.
 - Season the fried rice: Drizzle soy sauce over the mixture and sprinkle salt and black pepper to taste, then stir well to distribute the seasoning thoroughly.
 - Final stir-fry: Continue stir-frying everything together for another 3–4 minutes, ensuring the rice is hot throughout and all flavors are well blended.
 - Serve: Serve the Blackstone fried rice hot as a satisfying side dish or as a flavorful base to accompany grilled chicken, shrimp, or beef.

Notes
- Use day-old rice or rice cooked and cooled to prevent clumping and achieve better texture.
 - Adjust soy sauce and salt according to taste preference depending on the saltiness of the soy sauce brand used.
 - For extra flavor, you can add chopped green onions or minced garlic during the vegetable sauté step.
 - You can customize by adding your choice of protein such as diced chicken, shrimp, or tofu.
 - Be careful not to overcook the eggs to keep them tender and moist.
