Wet Ingredients

  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and facilitate even baking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, protein powder, almond flour, baking soda, cinnamon, and salt. Mix well to evenly distribute the leavening agent and spices.
  3. Add Wet Ingredients: Add honey, unsweetened applesauce, and vanilla extract to the dry mixture. Stir thoroughly until the mixture is well combined into a dough.
  4. Incorporate Blueberries: Gently fold in the blueberries, taking care not to crush them, to evenly distribute the fruit throughout the dough.
  5. Form Pastries: Using a spoon or scoop, place the mixture into small mounds on the prepared baking sheet, forming approximately 8 to 10 individual pastries.
