Description

This savory Breakfast Bundt Cake is a delightful twist on classic breakfast casserole, combining eggs, sausage, hash browns, and cheese in a fun and flavorful presentation. Perfect for a weekend brunch or make-ahead breakfast option.

Ingredients

Scale

Ingredients:

  • 1 pound breakfast sausage (cooked and crumbled)
  • 2 cups frozen shredded hash browns (thawed)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • nonstick cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 375°F. Grease a 10-cup Bundt pan thoroughly with nonstick cooking spray.
  2. Cook the sausage: In a large skillet, cook the sausage over medium heat until browned and cooked through, then drain excess grease.
  3. Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Combine ingredients: In a separate large bowl, combine the cooked sausage, hash browns, shredded cheese, and green onions. Pour the egg mixture over the sausage mixture and stir to combine.
  5. Bake: Spoon the mixture evenly into the prepared Bundt pan, pressing down slightly. Bake for 40–45 minutes until the center is set and a knife inserted comes out clean.
  6. Cool and serve: Let cool for 10 minutes before inverting onto a serving plate. Slice and serve warm.

Notes

  • You can substitute bacon or diced ham for the sausage.
  • Add diced bell peppers or spinach for extra veggies.
  • This dish can be made ahead and reheated for a quick breakfast.
