Description

This Breakfast Garbage Bread is a hearty and delicious breakfast roll packed with scrambled eggs, savory breakfast sausage, crispy bacon, and melted Colby cheese all wrapped in a golden-buttery pizza dough crust. Perfect for feeding a crowd or a weekend brunch, it can be enjoyed on its own or dipped in rich breakfast gravy for added flavor.

Ingredients

Scale

Dough

  • 13.8 oz Premade Pizza Dough or Homemade Dough

Filling

  • 6 Eggs, scrambled
  • 1 lb Breakfast sausage, cooked and crumbled
  • 6 slices Bacon, cooked
  • 2 cups Colby cheese, freshly grated

Optional

  • Breakfast gravy (for dipping sauce)
  • Green onions, diced (optional garnish)
  • 2 tablespoons melted butter (for brushing crust)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Dough: Roll out the pizza dough into a 9×13-inch rectangle and place it on the prepared baking sheet, ensuring an even thickness.
  3. Add Cheese Base: Spread 1 cup of freshly grated Colby cheese evenly across the dough as the first layer for a cheesy foundation.
  4. Layer Fillings: Evenly distribute the scrambled eggs, crumbled cooked sausage, and cooked bacon slices over the cheese, covering the surface completely for a flavorful filling.
  5. Top with Cheese: Sprinkle the remaining 1 cup of Colby cheese on top of the meat and egg mixture for a melty cheese crust inside the roll.
  6. Roll and Seal: Carefully roll the dough up tightly lengthwise starting with the long side. Pinch the edges to seal completely, then place the seam side down on the baking sheet to keep the roll intact while baking.
  7. Butter the Crust: Brush the entire surface of the dough roll with melted butter to encourage browning and add rich flavor.
  8. Bake: Place the baking sheet in the preheated oven and bake the roll for 12-15 minutes or until the crust is golden brown and cooked through.
  9. Cool and Serve: Remove from oven and allow to cool for about 5 minutes before slicing. Optionally serve with breakfast gravy for dipping and garnish with diced green onions if desired.

Notes

  • You can substitute Colby cheese with cheddar or Monterey Jack if preferred.
  • For a spicier version, add diced jalapeños or hot sauce to the filling.
  • If you do not have premade pizza dough, a homemade or store-bought bread dough works well.
  • This dish can be prepared ahead of time and reheated in the oven for breakfast on busy mornings.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated well.
