Lobster Tails:
- 4 lobster tails (4–6 oz each)
Butter Poaching Liquid:
- 1 cup unsalted butter (2 sticks)
- 2 cloves garlic, smashed
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh chives or parsley, finely chopped
- Salt to taste
Instructions
- Prepare Lobster Tails: Cut down the top of each lobster tail shell and gently pull the meat out to rest on top while still attached at the base. Set aside.
- Prepare Butter Poaching Liquid: In a medium saucepan over low heat, melt the butter slowly. Add the smashed garlic cloves and let them infuse the butter for 3–4 minutes. Stir in the lemon zest and lemon juice.
- Poach Lobster Tails: Reduce heat to the lowest setting so the butter is just warm, not bubbling. Add the lobster tails to the butter, meat side down, and poach gently for 6–8 minutes, turning once halfway through, until the meat is opaque and tender. Spoon the butter over the tails occasionally as they cook.
- Finish and Serve: Remove lobster tails from the butter and garnish with fresh chives or parsley. Serve immediately with extra lemon wedges and butter on the side.

- For the best texture, keep the butter just below a simmer—if it starts to bubble, reduce the heat.
- Serve with risotto, pasta, or roasted vegetables for a luxurious meal.
