Main Ingredients
- 1 cup long-grain white rice
- 2 tablespoons unsalted butter
- 1 medium yellow onion, finely chopped
- 2 cups low-sodium chicken broth (or vegetable broth for vegetarian option)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the onion: In a medium saucepan, melt the butter over medium heat. Add the finely chopped onion and cook for 5–7 minutes until the onion is soft and lightly golden, stirring occasionally to prevent burning.
- Toast the rice: Stir in the rice to the saucepan with the cooked onions and butter. Toast the rice for 1–2 minutes until it is lightly fragrant, which enhances its flavor.
- Add broth and season: Pour the chicken broth into the saucepan, then add the salt and black pepper. Stir to combine all ingredients evenly.
- Simmer the rice: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and let it simmer gently for 15–18 minutes, or until the rice grains are tender and the liquid has been fully absorbed.
- Rest the rice: Remove the saucepan from heat and keep it covered. Let the rice sit for 5 minutes to allow steam to finish cooking the rice and make it fluffy.
- Fluff and serve: After resting, fluff the rice gently with a fork to separate the grains. Serve the buttery onion rice warm as a delicious side dish.
Notes
- Substitute brown rice for a nuttier flavor, but increase cooking time and liquid quantity slightly for proper cooking.
- For extra richness, stir in an additional tablespoon of butter just before serving.
