Description

A comforting and savory cabbage casserole featuring a creamy egg batter, fresh herbs, and melted mozzarella cheese baked to golden perfection. This easy-to-make dish combines tender green cabbage with a flavorful blend of sour cream, mayonnaise, and spices, perfect as a hearty side or a light main course for six people.

Ingredients

Scale

Wet Ingredients

  • 4 large eggs
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise

Dry Ingredients

  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp corn starch
  • 1/2 tsp salt

Vegetables and Herbs

  • 1 lb green cabbage (about 1/2 medium head or 6 cups finely sliced)
  • 2 Tbsp dill (fresh or frozen, chopped)
  • 2 Tbsp green onion (finely chopped, plus more to garnish)

Cheese

  • 4 oz mozzarella cheese (about 1 1/2 cups shredded)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375ËšF (190ËšC). Butter a 9-inch round pie dish thoroughly to prevent sticking and ensure easy serving.
  2. Mix Wet Ingredients: In a medium mixing bowl, whisk together 4 large eggs, 1/4 cup sour cream, and 1/4 cup mayonnaise until the mixture is smooth and fully blended.
  3. Combine Dry Ingredients: In a separate small bowl, stir together 1/4 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon corn starch. Gradually whisk this flour mixture into the egg mixture until the batter is smooth with no lumps.
  4. Prepare Cabbage Mixture: Finely slice 1 pound of green cabbage and place it into another medium bowl. Sprinkle 1/2 teaspoon salt on the cabbage and scrunch it with your hands for about 30 seconds to soften. Then stir in 2 tablespoons of finely chopped green onion and 2 tablespoons of chopped dill.
  5. Assemble Casserole: Spread the softened cabbage mixture evenly over the bottom of the buttered pie dish. Pour the prepared batter evenly over the cabbage layer. Sprinkle 1 1/2 cups shredded mozzarella cheese evenly over the top of the batter.
  6. Bake: Place the dish on the center rack of your preheated oven and bake for about 35 minutes, or until the top turns golden brown and the casserole is set.

Notes

  • Scrunching the cabbage with salt helps to soften it and release excess moisture, improving texture.
  • You can substitute mozzarella with a mild cheese like Monterey Jack if preferred.
  • For added flavor, garnish with extra chopped green onions after baking.
  • Ensure the batter is smooth before combining to avoid lumps in the casserole.
  • This casserole can be served warm or at room temperature.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven.
