Salad Bites

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine, drained)
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Balsamic Reduction

  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

Serving

  • Toothpicks or small skewers for serving


Instructions

  1. Prepare Balsamic Reduction: In a small saucepan over medium heat, combine the balsamic vinegar and honey or brown sugar. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 8 to 10 minutes until it thickens and reduces by about half. Remove from heat and allow it to cool; it will continue to thicken as it cools.
  2. Assemble Caprese Bites: Thread one cherry tomato, one fresh basil leaf, and one mozzarella ball onto each toothpick or skewer. Arrange these assembled bites neatly on a serving platter.
  3. Season and Serve: Drizzle the assembled bites with olive oil and season with salt and freshly ground black pepper. Just before serving, drizzle the balsamic reduction over the bites or serve it on the side as a dipping sauce for added flavor.

Notes

  • For enhanced flavor, sprinkle a pinch of sea salt or crushed red pepper flakes over the bites.
  • Using heirloom cherry tomatoes can add attractive color variations to the presentation.
