Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pot pie.
  2. Sauté Aromatics: In a large skillet, melt the butter over medium heat. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds more to release flavors.
  3. Make Roux: Sprinkle in the flour and stir continuously to form a roux, cooking for 1–2 minutes until it turns lightly golden, which helps thicken the filling.
  4. Add Liquids and Seasonings: Slowly whisk in the seafood stock and heavy cream, stirring until the mixture thickens. Season with Old Bay seasoning, salt, and black pepper to enhance the seafood flavors.
  5. Cook Vegetables: Add diced carrots, peas, corn, and parboiled potatoes to the skillet. Simmer for 5 minutes until the vegetables start to soften without losing their texture.
