- Prepare the Cheese Puff Buns: Preheat your oven to 450°F (235°C) and line a baking sheet with a silicone mat. In a pot, combine water, butter, and salt, bringing it to a simmer. Stir in the flour until a dough forms, then continue stirring vigorously for 2-3 minutes. Let the dough cool for 5-10 minutes before adding the eggs, cayenne pepper, and black pepper. Fold in half of the shredded cheese mixture. Scoop the dough into 12 equal balls and place them onto the prepared baking sheet. Sprinkle the remaining cheese on top of each. Reduce the oven temperature to 375°F (190°C) and bake for 35 minutes until the buns are golden and puffed. Allow them to cool completely before assembling.
- Make the Secret Sauce: In a small bowl, mix together the mayonnaise, ketchup, and mustard until well combined. Set the sauce aside.
- Cook the Sliders: Form the ground beef into 12 small, evenly sized patties. Season both sides with salt and pepper. Heat a skillet over medium-high heat and cook the patties for 2-3 minutes per side to achieve medium-rare doneness. Remove the patties and let them rest for 2-3 minutes to retain their juices.
