This Cheeseburger Quesadilla combines the savory flavors of a classic cheeseburger with the crispy, cheesy goodness of a quesadilla, making it a perfect fusion dish for a quick and satisfying meal or appetizer.

Beef Mixture
- 1 pound ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
Quesadilla Assembly
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/2 cup diced onions (optional)
- 1/2 cup diced pickles
- 2 tablespoons butter
Optional Garnish
- Extra ketchup
- Mustard
- Thousand Island dressing for dipping
Instructions
- Cook the Beef: In a large skillet over medium-high heat, add the ground beef and cook until browned, about 6–7 minutes. Once browned, drain the excess fat from the skillet to reduce grease. Stir in salt, black pepper, garlic powder, onion powder, ketchup, and yellow mustard, mixing until well combined. Remove the beef mixture from heat and set aside.
- Prepare the Quesadilla Skillet: Heat a clean skillet or griddle over medium heat. Add a small amount of butter and let it melt to coat the surface, preventing sticking and adding flavor.
- Assemble the Quesadilla: Place one flour tortilla onto the skillet. Evenly sprinkle about 1/2 cup of shredded cheddar cheese over the tortilla. Next, add a layer of the cooked beef mixture, then scatter diced onions and pickles over it. Top with another 1/2 cup of cheese, and then place a second tortilla on top to form the quesadilla sandwich.
- Cook the Quesadilla: Cook for 2–3 minutes on one side until the tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula and cook the other side for another 2–3 minutes, until golden brown and the cheese inside has melted thoroughly.
- Repeat and Serve: Remove the cooked quesadilla from the skillet. Repeat the assembly and cooking process for the remaining tortillas and filling. Once all quesadillas are done, slice each into wedges and serve with optional dips such as ketchup, mustard, or Thousand Island dressing.
Notes
- For a more classic cheeseburger flavor, substitute cheddar cheese with American cheese.
- Add cooked bacon or jalapeños to the beef mixture for extra flavor and a little heat.
- Make sure to drain excess fat from the beef to avoid greasy quesadillas.
- Use low-fat cheese to reduce overall fat content if desired.
