Filling:
- 1 pound fresh strawberries, hulled and halved
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Optional Garnish:
- 1/4 cup graham cracker crumbs
- fresh mint leaves
Instructions
- Hollow out the strawberries: Using a small spoon or melon baller, carefully scoop out a small portion of the center of each halved strawberry.
- Prepare the filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fill the strawberries: Spoon or pipe the cheesecake mixture into the hollowed-out center of each strawberry half.
- Add garnish: Sprinkle graham cracker crumbs over the tops for a ‘crust’ effect. Garnish with mint leaves if desired.
- Chill and serve: Chill the filled strawberries for at least 15 minutes before serving.
