Description

This Cheesy Stuffing Casserole is a comforting, easy-to-make dish perfect for weeknight dinners or holiday gatherings. Featuring a cheesy vegetable base made with broccoli and corn, creamy condensed soup, and topped with flavorful stuffing, it combines savory and creamy textures for a crowd-pleasing casserole.

Ingredients

Scale

Stuffing

  • 1 box (6 ounces) stuffing mix (chicken or turkey)

Vegetables and Soup

  • 1 bag (12 ounces) frozen broccoli (thawed)
  • 1 bag (10 ounces) frozen corn (thawed)
  • 1 can (10 ounces) condensed cream of chicken soup
  • Salt and pepper, to taste

Cheese

  • 8 ounces Velveeta cheese, cubed (or 1 cup freshly grated cheddar cheese)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish using cooking spray and set it aside to prepare the ingredients.
  2. Prepare Stuffing: Cook the stuffing mix according to the package directions, ensuring it is fully prepared and set aside for later layering.
  3. Combine Vegetables and Soup: In the prepared baking dish, add the thawed broccoli and corn. Pour the condensed cream of chicken soup over the vegetables and stir gently to combine. Season the mixture with salt and pepper to your taste. Distribute the cubed Velveeta cheese evenly over the top of the vegetable mixture.
  4. Add Stuffing Topping: Evenly spread the prepared stuffing on top of the vegetable and cheese layer. Cover the baking dish tightly with aluminum foil to lock in moisture during baking.
  5. Bake: Place the covered dish in the preheated oven and bake for 35 to 40 minutes. After baking, carefully remove the foil and let the casserole stand for a few minutes before serving to allow it to set and cool slightly. Enjoy your cheesy stuffing casserole!

Notes

  • For a vegetarian version, substitute the cream of chicken soup with a cream of mushroom or vegetable soup and use vegetable-based stuffing mix.
  • Make sure to thaw the frozen vegetables beforehand to ensure even cooking.
  • You can substitute Velveeta cheese with freshly grated cheddar for a sharper flavor.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
