Description
A creamy, cheesy taco dip that’s perfect for parties and gatherings. This easy-to-make dip combines seasoned ground beef with a blend of melted cheeses and zesty diced tomatoes with green chilies, served warm and perfect for dipping with tortilla chips or fresh veggies.
Ingredients
Scale
Meat
- 1 pound ground beef
Cheeses
- 1 block (16 ounces) Velveeta cheese, cubed
- 1 package (8 ounces) cream cheese, softened
- 2 cups Fiesta Blend cheese (or a mix of cheddar and Monterey Jack), shredded
Other Ingredients
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
- 2 tablespoons taco seasoning (homemade or store-bought)
- Tortilla chips or sliced veggies for serving
Instructions
- Brown the Ground Beef: In a large skillet over medium heat, cook the ground beef until it is fully browned and no longer pink. Drain any excess grease from the skillet to keep the dip from being too oily.
- Melt the Cheeses: To the same skillet with the cooked beef, add the cubed Velveeta cheese, softened cream cheese, shredded Fiesta Blend cheese, drained Rotel tomatoes and green chilies, and taco seasoning. Stir continuously over medium heat until all the cheeses have melted and the mixture becomes smooth and creamy.
- Adjust Seasoning: Taste the dip and add more taco seasoning or a pinch of cayenne pepper if you prefer extra heat or stronger flavor. Stir to combine the seasoning thoroughly.
- Transfer & Serve: Transfer the warm cheesy taco dip to a serving bowl or keep it warm in a slow cooker on the “keep warm” setting. Serve immediately with tortilla chips or sliced vegetables for dipping.
- Enjoy: Enjoy this crowd-pleasing creamy, cheesy taco dip with friends and family at parties, game days, or casual get-togethers.
Notes
- Using a blend of cheddar and Monterey Jack cheese is fine if Fiesta Blend cheese is unavailable.
- Drain excess grease after browning the beef to prevent the dip from becoming too greasy.
- Keep the dip warm in a slow cooker to maintain texture and flavor during serving.
- For a spicier dip, add extra taco seasoning or cayenne pepper according to taste.
- Can be paired with tortilla chips, sliced bell peppers, cucumbers, or carrots for a healthier dipping option.
