Description

This Chicken Cobbler recipe is a comforting and savory casserole perfect for a cozy family dinner. Layers of shredded chicken, mixed vegetables, and a creamy sauce are topped with a fluffy biscuit-like crust. Easy to make and delicious to eat!

Ingredients

Scale

For the Filling:

  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup milk
  • ½ cup unsalted butter (melted)
  • 1 teaspoon dried thyme or poultry seasoning (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Pour melted butter into a 9×13-inch baking dish.
  2. Layer the Ingredients: Spread shredded chicken, then frozen mixed vegetables over the butter in the dish.
  3. Prepare the Sauce: Whisk together cream of chicken soup and chicken broth; pour over chicken and vegetables.
  4. Make the Biscuit Topping: In a separate bowl, whisk flour, baking powder, garlic powder, salt, pepper, and milk until smooth. Pour over the casserole.
  5. Bake: Sprinkle with thyme or poultry seasoning. Bake uncovered for 45–50 minutes until golden brown.
  6. Serve: Let rest for 5–10 minutes before serving.

Notes

  • You can use rotisserie chicken for convenience.
  • Feel free to swap in any veggies you have on hand.
  • Do not mix the layers before baking for the cobbler-like texture.
