Chicken and Vegetables
- 3 chicken breasts, no skin or bones, cut into chunks
- Half an onion, chopped small
- 12 oz of frozen mixed vegetables
- 1 tablespoon of garlic, finely minced
Pasta
- 12 oz of egg noodles
Seasonings and Sauces
- 2 tablespoons of butter
- 1 teaspoon chicken bouillon powder
- A sprinkle of paprika (½ teaspoon)
- A pinch of salt and some pepper (to taste)
- 1 can (10.5 oz) of cream of mushroom soup
- 1 can (10.5 oz) of cream of chicken soup
- ½ cup of milk
Instructions
- Cook the noodles: Bring a large pot of water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside for later.
- Sauté the onion: Melt butter in a pan over medium-high heat. Add the chopped onion and cook for 2–3 minutes until fragrant and softened.
- Cook the chicken: Add the diced chicken to the pan. Season with paprika, chicken bouillon powder, salt, and pepper. Stir occasionally and cook until the chicken is nearly cooked through.
- Add vegetables and garlic: Incorporate the frozen mixed vegetables into the pan and cook for about 5 minutes. Then add the minced garlic and stir for another 30 seconds to release its aroma.
- Create the creamy sauce: Reduce heat to medium. Pour in both cans of cream of mushroom and cream of chicken soups, then add the milk. Stir continuously until the mixture is smooth and warmed through.
- Combine noodles and sauce: Add the cooked egg noodles into the creamy chicken and vegetable mixture. Stir well to coat all the noodles evenly with the sauce.
- Serve: Dish out the creamy chicken pasta into bowls and enjoy warm for a cozy, satisfying meal.
