Description

This classic Chicken Noodle Soup is a comforting and hearty dish made with tender chicken, egg noodles, and a medley of fresh vegetables simmered in a flavorful chicken broth. Perfect for chilly days or when you need a soothing meal, this easy-to-make recipe uses simple ingredients and cooks quickly on the stovetop.

Ingredients

Scale

Vegetables and Aromatics

  • 1 medium onion, diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced

Soup Base

  • 1 tablespoon olive oil
  • 8 cups chicken broth

Main Ingredients

  • 2 cups shredded cooked chicken (rotisserie or boiled)
  • 2 cups egg noodles

Seasonings and Garnish

  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and black pepper to taste
  • Juice of 1/2 lemon (optional)
  • Fresh parsley for garnish

Instructions

  1. Sauté Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook for 5 to 6 minutes, stirring occasionally, until the vegetables are softened and fragrant. Add the minced garlic and sauté for an additional 1 minute to release its aroma.
  2. Add Broth and Bring to Boil: Pour the chicken broth into the pot with the sautéed vegetables. Increase the heat and bring the broth to a rolling boil to start the cooking process for the noodles and chicken.
  3. Simmer with Chicken and Noodles: Stir in the shredded cooked chicken, egg noodles, dried thyme, and dried parsley. Reduce the heat to a simmer and cook for 10 to 12 minutes, or until the egg noodles are tender and the flavors meld together.
  4. Season and Add Lemon Juice: Season the soup with salt and black pepper to taste. If desired, stir in the juice of half a lemon to add a fresh, bright note to the soup.
  5. Serve and Garnish: Ladle the hot soup into bowls and garnish each serving with freshly chopped parsley. Serve immediately for the best taste and warmth.

Notes

  • Use leftover or rotisserie chicken to save time and add flavor.
  • The soup keeps well in the refrigerator for up to 4 days; reheat gently before serving.
  • Add extra broth or water when reheating if the noodles have absorbed too much liquid to maintain a good consistency.
