Description

Delicious and easy Chicken Roll Ups featuring flavorful seasoned chicken breasts filled with creamy Boursin and mozzarella cheeses, baked to juicy perfection. A comforting and cheesy main dish perfect for a family dinner.

Ingredients

Scale

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Chicken and Filling

  • 1 pound thinly sliced chicken breasts
  • 5.3 ounces garlic & fine herbs Boursin cheese (1 package)
  • ½ cup freshly shredded mozzarella cheese

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper to prevent sticking and make cleanup easier.
  2. Season Chicken: In a small bowl, mix together garlic powder, smoked paprika, Italian seasoning, kosher salt, and ground black pepper. Evenly sprinkle this mixture over both sides of the thinly sliced chicken breasts to enhance their flavor.
  3. Fill and Roll: Spread the entire package of Boursin cheese evenly over each seasoned chicken breast. Next, sprinkle ½ cup of shredded mozzarella cheese on top. Carefully roll up each chicken breast starting from one end and place them seam-side down on the prepared baking sheet to keep the filling inside during baking.
  4. Bake: Place the baking sheet in the preheated oven and bake the chicken roll ups for 35 to 40 minutes. Bake until the chicken reaches an internal temperature of 165°F (74°C), ensuring it is fully cooked and safe to eat. The cheese will melt and the chicken will be juicy and flavorful.

Notes

  • Thinly sliced chicken breasts work best for easy rolling and even cooking.
  • Use a meat thermometer to ensure the chicken reaches the safe internal temperature of 165°F (74°C).
  • For extra crispiness, you can broil the chicken roll ups for 2-3 minutes after baking.
  • This recipe pairs well with steamed vegetables or a fresh side salad.
  • Leftovers can be refrigerated and reheated in the oven for best texture.
