Ingredients
Scale
Chicken and Vegetables
- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 small onion, diced
- 3 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach, roughly chopped
Seasonings and Dairy
- 2 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the dish.
- Sauté Onions: In a large skillet over medium heat, warm the olive oil. Add the diced onion and sauté for 2 to 3 minutes until softened and translucent.
- Add Garlic and Mushrooms: Stir in the minced garlic and cook for one more minute until fragrant. Add the sliced mushrooms and cook for 5 to 6 minutes until tender and most of their moisture evaporates.
- Cook Chicken: Add the bite-sized chicken pieces to the skillet along with dried thyme, paprika, salt, and black pepper. Cook for approximately 5 minutes until the chicken is no longer pink on the outside but not fully cooked through yet.
- Add Spinach: Stir in the chopped fresh spinach and cook until wilted, which usually takes a few minutes.
- Create Sauce: Pour in the heavy cream and add Parmesan cheese to the skillet. Stir constantly and cook for 2 to 3 minutes until the sauce thickens slightly and becomes creamy.
- Transfer to Baking Dish: Transfer the entire mixture into a greased 9×13-inch baking dish, spreading evenly.
- Top with Mozzarella: Sprinkle the shredded mozzarella cheese evenly over the top of the mixture.
- Bake: Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is melted, golden, and bubbly.
- Cool and Serve: Remove from the oven and let it cool slightly before serving. This helps the dish set and enhances the flavors.
Notes
- For extra flavor, consider mixing sun-dried tomatoes into the mixture before baking or sprinkling crushed red pepper flakes on top for a spicy kick.
- This dish can be prepared ahead of time and reheated, making it perfect for meal prep.
- Serve alongside a fresh side salad or roasted vegetables to complete your low-carb meal.
