Description

This Chicken, Spinach, and Mushroom Low Carb Oven Dish is a creamy, savory casserole perfect for a healthy, satisfying meal. Featuring tender chicken breast pieces cooked with sautéed mushrooms, fresh spinach, and a rich Parmesan and mozzarella cheese sauce, this dish is low in carbs and packed with protein. It’s an ideal recipe for those following a keto or gluten-free diet, combining simple ingredients with comforting flavors, all baked to bubbly perfection in the oven.

Ingredients

Scale

Chicken and Vegetables

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach, roughly chopped

Seasonings and Dairy

  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the dish.
  2. Sauté Onions: In a large skillet over medium heat, warm the olive oil. Add the diced onion and sauté for 2 to 3 minutes until softened and translucent.
  3. Add Garlic and Mushrooms: Stir in the minced garlic and cook for one more minute until fragrant. Add the sliced mushrooms and cook for 5 to 6 minutes until tender and most of their moisture evaporates.
  4. Cook Chicken: Add the bite-sized chicken pieces to the skillet along with dried thyme, paprika, salt, and black pepper. Cook for approximately 5 minutes until the chicken is no longer pink on the outside but not fully cooked through yet.
  5. Add Spinach: Stir in the chopped fresh spinach and cook until wilted, which usually takes a few minutes.
  6. Create Sauce: Pour in the heavy cream and add Parmesan cheese to the skillet. Stir constantly and cook for 2 to 3 minutes until the sauce thickens slightly and becomes creamy.
  7. Transfer to Baking Dish: Transfer the entire mixture into a greased 9×13-inch baking dish, spreading evenly.
  8. Top with Mozzarella: Sprinkle the shredded mozzarella cheese evenly over the top of the mixture.
  9. Bake: Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is melted, golden, and bubbly.
  10. Cool and Serve: Remove from the oven and let it cool slightly before serving. This helps the dish set and enhances the flavors.

Notes

  • For extra flavor, consider mixing sun-dried tomatoes into the mixture before baking or sprinkling crushed red pepper flakes on top for a spicy kick.
  • This dish can be prepared ahead of time and reheated, making it perfect for meal prep.
  • Serve alongside a fresh side salad or roasted vegetables to complete your low-carb meal.
