Instructions
- Blend the base mixture: Combine chickpeas, peanut butter, maple syrup, flour, vanilla extract, and salt in a powerful blender such as a Vitamix®. Blend the ingredients until smooth, using the tamper if needed to help incorporate everything evenly. Then, scoop the smooth mixture into a mixing bowl.
- Add mix-ins: Stir the vegan chocolate chips and peanuts into the blended chickpea mixture to distribute the chocolate and nut pieces evenly throughout the dough.
- Form cookie balls: Using your hands or a spoon, roll the mixture into approximately 24 bite-sized balls. Place the cookie dough balls on a tray or plate to set before serving or storing.
