Description

This Chipotle Sweet Potatoes with Bacon recipe combines the natural sweetness of tender steamed sweet potatoes with the smoky heat of chipotle peppers and savory crunch of crispy bacon. Mashed with butter and seasoned with adobo sauce and salt, this dish makes a flavorful and comforting side perfect for any meal.

Ingredients

Scale

Sweet Potatoes

  • 4 large sweet potatoes, peeled and cubed

Seasonings & Add-ins

  • 4 tablespoons butter
  • 1 1/2 to 3 teaspoons chipotle pepper, chopped
  • 1/2 to 1 teaspoon adobo sauce (from can of chipotle peppers)
  • 1 teaspoon salt

Toppings

  • 3 strips bacon, cooked and crumbled
  • 1 green onion, chopped

Instructions

  1. Boil Water: Fill a saucepan with 3 inches of water, cover it, and set over high heat to bring the water to a boil.
  2. Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into 1-inch cubes. Place the cubed potatoes in a steamer basket.
  3. Steam Sweet Potatoes: Once the water is boiling, reduce heat to a simmer and place the steamer basket over the water. Cover with a lid, ensuring that the water is at least 2 inches below the basket.
  4. Cook Until Tender: Steam the sweet potatoes for about 20 minutes or until they are fork tender when pierced.
  5. Mash and Season: Transfer the steamed potatoes to a bowl, add butter, and mash with a potato masher. Stir in the chipotle peppers, adobo sauce, and salt until well combined.
  6. Finish and Serve: Transfer the mashed sweet potatoes to a serving bowl and top with crumbled cooked bacon and chopped green onions for added flavor and texture.

Notes

  • You can adjust the amount of chipotle pepper and adobo sauce to your preferred level of spiciness.
  • To save time, cook bacon in advance or use pre-cooked bacon.
  • If you prefer, the sweet potatoes can be boiled instead of steamed, but steaming helps retain more nutrients.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently.
