Ingredients
Scale
Posset Base
- 2 cups heavy cream
- 1/2 cup granulated sugar
- Zest of 1 orange
Flavorings
- 1/4 cup freshly squeezed orange juice
- 2 teaspoons vanilla extract
Chocolate and Setting Agents
- 4 oz dark chocolate (70% cocoa), chopped or broken into pieces
- 1 teaspoon Vegan Gelatin (optional)
Instructions
- Heat cream mixture: In a medium saucepan, combine the heavy cream, granulated sugar, and orange zest. Heat the mixture over medium heat, stirring occasionally until the sugar has completely dissolved and the mixture is warmed through.
- Add orange juice and vanilla: Remove the saucepan from heat and stir in the freshly squeezed orange juice and vanilla extract thoroughly to combine all flavors.
- Incorporate chocolate: Pour the warm cream mixture over the broken dark chocolate pieces in a bowl. Let it sit undisturbed for a few minutes to allow the chocolate to melt, then stir gently until the mixture is completely smooth and glossy.
- Mix in vegan gelatin (optional): If using vegan gelatin, first dissolve it in warm water according to package instructions and then fold it into the chocolate cream mixture to ensure it blends evenly.
- Set the posset: Pour the finished posset mixture evenly into serving glasses or ramekins. Refrigerate for at least 2 to 4 hours, or until fully set and chilled.
- Serve: Serve the Chocolate Orange Posset chilled. Optionally garnish with additional orange zest or whipped cream just before serving to enhance presentation and flavor.
Notes
- For a dairy-free version, substitute heavy cream with full-fat coconut cream and use vegan gelatin.
- Ensure the orange juice is freshly squeezed for the best vibrant flavor.
- Do not boil the cream mixture; heating until the sugar dissolves is sufficient.
- Chill times can be extended up to overnight for a firmer texture.
- This dessert can be made a day ahead, making it great for entertaining.
