Chicken:

Corn Mixture:
- 2 cups corn kernels (fresh, frozen, or canned and drained)
- 2 tablespoons butter
- Juice of 2 limes
- Zest of 1 lime
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion (optional)
- Lime wedges for serving
Instructions
- Prepare the Chicken: In a large bowl, toss the chicken with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper.
- Cook the Chicken: Heat a large skillet over medium-high heat and cook the chicken for 5–6 minutes per side until fully cooked and golden brown. Transfer to a plate and let rest.
- Prepare the Corn Mixture: In the same skillet, add butter and corn, cooking for 4–5 minutes until slightly charred and tender. Stir in lime juice, lime zest, cilantro, and red onion if using.
- Combine and Serve: Slice or dice the chicken, return it to the skillet, and toss everything together until well combined and heated through. Serve with lime wedges and additional cilantro if desired.
