Description

Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts

Corn Mixture:

  • 2 cups corn kernels (fresh, frozen, or canned and drained)
  • 2 tablespoons butter
  • Juice of 2 limes
  • Zest of 1 lime
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion (optional)
  • Lime wedges for serving


Instructions

  1. Prepare the Chicken: In a large bowl, toss the chicken with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and cook the chicken for 5–6 minutes per side until fully cooked and golden brown. Transfer to a plate and let rest.
  3. Prepare the Corn Mixture: In the same skillet, add butter and corn, cooking for 4–5 minutes until slightly charred and tender. Stir in lime juice, lime zest, cilantro, and red onion if using.
  4. Combine and Serve: Slice or dice the chicken, return it to the skillet, and toss everything together until well combined and heated through. Serve with lime wedges and additional cilantro if desired.
