- Cook to hard crack stage: Attach a candy thermometer to the pan and bring the mixture to a boil. Heat it until it reaches 300°F (hard crack stage), which usually takes about 20 minutes. Watch carefully and briefly remove from heat if the mixture nears the edge of the pan to prevent boiling over.
- Add cinnamon oil and pour: Remove the pan from heat once 300°F is reached. Carefully stir in the cinnamon oil—be cautious as it is very strong. Quickly pour the hot candy into the prepared pan and allow it to cool undisturbed for at least 4 hours until fully set.
- Break and dust: After cooling, dust the top of the candy with powdered sugar. Flip the candy slab onto a cutting board, peel off the parchment, and use a knife to break it into bite-sized pieces. Optionally, dust with more powdered sugar to prevent sticking.
