For the Stew:
- 2 lbs beef chuck, cut into 1 1/2-inch cubes
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 2 cups dry red wine
- 2 cups beef broth
- 2 teaspoons fresh thyme (or 1 teaspoon dried)
- 2 bay leaves
For the Vegetables:
- 1 lb carrots, peeled and sliced into thick rounds
- 10 oz cremini or white mushrooms, halved or quartered
- 1 tablespoon butter
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven: to 325°F (160°C).
- Prepare the Beef: Pat the beef dry, season with salt and pepper. Brown in a Dutch oven, then set aside.
- Sauté Aromatics: Cook onion until softened, add garlic and tomato paste, then flour.
- Deglaze and Simmer: Pour in wine, add broth, thyme, bay leaves, and beef. Simmer, then bake for 1 1/2 hours.
- Add Vegetables: Stir in carrots, bake for another 45 minutes. Sauté mushrooms separately.
- Finish and Serve: Stir mushrooms into the stew, adjust seasoning, garnish with parsley, and serve.
Notes
- This stew tastes even better the next day.
- Serve with crusty bread or over mashed potatoes.
