Mashed Potato Topping

  • 2 pounds potatoes

Meat Filling

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen peas, carrots, and corn medley
  • 2 tbsp flour
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp rosemary
  • 1/2 tsp thyme
  • 1 bay leaf


Instructions

  1. Prep the Potatoes: Peel and boil potatoes until fork-tender, about 15 to 20 minutes. Drain the potatoes well, then mash them with butter, sour cream, milk, and season with salt and pepper to taste. Set the mashed potatoes aside.
  2. Cook the Meat Filling: In a skillet over medium heat, sauté the chopped onion and minced garlic until they become soft and translucent. Add the ground beef and cook until browned, breaking it apart. Stir in the flour and tomato paste, followed by Worcestershire sauce, beef broth, rosemary, thyme, and the frozen peas, carrots, and corn mixture. Add the bay leaf and let the mixture simmer gently for 5 to 7 minutes until thickened.
  3. Assemble: Preheat your oven to 375°F (190°C). Remove the bay leaf from the meat filling, then pour the mixture into a baking dish. Carefully spread the mashed potatoes evenly over the meat mixture.
  4. Bake: Place the assembled dish uncovered in the preheated oven and bake for 25 to 30 minutes, or until the mashed potatoes are golden brown and the filling is bubbling along the edges.
