			For the soup:
- 2 tablespoons olive oil
 - 2 tablespoons unsalted butter
 - 2 large heads of garlic (about 20–24 cloves), peeled and minced
 - 1 large onion, thinly sliced
 - 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
 - 6 cups low-sodium chicken broth (or vegetable broth for vegetarian version)
 - 1 bay leaf
 - 1 teaspoon salt
 - ½ teaspoon freshly ground black pepper
 
For serving:
- 4 large egg yolks
 - ½ cup grated Gruyère cheese
 - 4 slices of crusty French bread, toasted
 
Instructions
- Prepare the soup: In a large soup pot, heat olive oil and butter. Add garlic and onion, sauté until softened. Stir in thyme. Add broth, bay leaf, salt, and pepper. Simmer for 20–25 minutes.
 - Prepare the cheese mixture: Whisk egg yolks and Gruyère in a bowl.
 - Temper the egg mixture: Slowly add hot broth to the egg and cheese mixture while whisking.
 - Combine the soup: Gradually pour the egg mixture into the soup, stirring constantly. Warm gently without boiling.
 - Serve: Place a slice of toasted bread in each bowl and ladle the soup over the top. Serve hot.
 
Notes
- For a more rustic touch, rub the toasted bread with a raw garlic clove before serving.
