Description

Warm up with a bowl of delicious Country French Garlic Soup, a comforting and flavorful dish perfect for chilly evenings. This classic French recipe features a rich broth infused with garlic, onions, and thyme, topped with Gruyère cheese and served with crusty toasted bread.

Ingredients

Scale

For the soup:

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large heads of garlic (about 2024 cloves), peeled and minced
  • 1 large onion, thinly sliced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • 6 cups low-sodium chicken broth (or vegetable broth for vegetarian version)
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

For serving:

  • 4 large egg yolks
  • ½ cup grated Gruyère cheese
  • 4 slices of crusty French bread, toasted

Instructions

  1. Prepare the soup: In a large soup pot, heat olive oil and butter. Add garlic and onion, sauté until softened. Stir in thyme. Add broth, bay leaf, salt, and pepper. Simmer for 20–25 minutes.
  2. Prepare the cheese mixture: Whisk egg yolks and Gruyère in a bowl.
  3. Temper the egg mixture: Slowly add hot broth to the egg and cheese mixture while whisking.
  4. Combine the soup: Gradually pour the egg mixture into the soup, stirring constantly. Warm gently without boiling.
  5. Serve: Place a slice of toasted bread in each bowl and ladle the soup over the top. Serve hot.

Notes

  • For a more rustic touch, rub the toasted bread with a raw garlic clove before serving.
  • This soup pairs well with a crisp white wine or a simple green salad.
