Description

This Creamy Chicken and Spinach Casserole is a comforting and delicious baked dish combining tender chicken breasts, fresh spinach, and a rich blend of cream cheese and shredded cheeses. Perfectly seasoned with garlic and onion powders, this casserole delivers creamy texture and melty cheesy goodness, making it an ideal meal for family dinners or casual gatherings.

Ingredients

Scale

Chicken and Vegetables

  • 3-4 boneless, skinless chicken breasts (about 1 lb)
  • 5-6 cups fresh spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Dairy and Cheese

  • 8 oz cream cheese (full-fat)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Seasonings and Liquids

  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted, softening the greens and releasing moisture.
  3. Cook Chicken: Add diced chicken breasts to the skillet along with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until the chicken pieces are no longer pink inside, ensuring they are fully cooked.
  4. Add Cream Cheese and Broth: Reduce the heat to low. Mix in the cream cheese and chicken broth. Stir continuously until the mixture becomes smooth and creamy, combining the flavors well.
  5. Incorporate Cheese: Stir in half of the shredded mozzarella and cheddar cheeses until melted and evenly distributed throughout the chicken and spinach mixture.
  6. Bake the Casserole: Transfer the creamy mixture into a greased baking dish. Top with the remaining shredded cheese. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and golden brown on top.

Notes

  • You can substitute cream cheese with a lighter cream cheese for a lower-fat version but may slightly alter the creaminess.
  • Fresh spinach can be replaced with frozen spinach (thawed and drained) if fresh is unavailable.
  • Make sure chicken is cooked thoroughly before baking to ensure food safety.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For extra flavor, consider adding a pinch of nutmeg or smoked paprika to the cheese mixture.
