For the Rice:

  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon lime zest
  • 3 tablespoons lime juice
  • ½ cup chopped fresh cilantro
  • 2 cloves garlic (minced)
  • ½ cup finely diced onion
  • 2 tablespoons unsalted butter

Instructions

  1. Season the Chicken: Season the chicken with cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. Prepare the Rice: In the same skillet, melt the butter and sauté the onion and garlic. Stir in the rice and toast for 1 minute. Add chicken broth, bring to a boil, cover, and simmer for 15 minutes until rice is tender.
  4. Finish the Dish: Stir in heavy cream, lime zest, lime juice, and cilantro. Return chicken to the skillet and simmer in the sauce for 5 minutes. Serve warm, spooning sauce over chicken and rice.
