- 2-3 tsp anchovy paste (or 2-3 anchovies)
- 1 large clove garlic, finely minced

- 2 Tbsp freshly squeezed lemon juice
- 1 large egg yolk
- 1 tsp Dijon mustard
- ½ cup oil (olive or avocado oil)
- ¼ cup grated Parmesan cheese

Instructions
- Mix the Anchovy and Garlic: Finely mince the garlic clove on a cutting board or use a garlic press. Add the anchovy paste and salt, then smash the mixture with the side of a knife until it forms a cohesive paste.
- Make the Base: Place a towel in a medium saucepan to stabilize a medium bowl sitting inside it (ensure this is done off the stovetop). In the bowl, combine the egg yolk, lemon juice, and Dijon mustard. Whisk vigorously until the mixture becomes frothy and bubbles form on the surface.
- Emulsify with Oil: Slowly add 1-2 tablespoons of oil drop by drop into the mixture while continuously whisking. Once thickened, gradually pour in the remaining oil one tablespoon at a time, whisking steadily to create a smooth emulsion.
- Bring it All Together: Incorporate the anchovy and garlic paste, grated Parmesan cheese, and black pepper. If the dressing is too thick, add water gradually to reach your desired consistency. Serve immediately or refrigerate for up to one week.
