Orzo Pasta:

  • 1 cup orzo pasta

Vegetables:

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8 oz cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups baby spinach

Sauce and Seasoning:

  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 1 ½ cups low-sodium vegetable or chicken broth
  • Salt and black pepper to taste
  • ¼ teaspoon crushed red pepper flakes (optional)

Garnish:

  • Chopped fresh parsley

Instructions

  1. Sauté Mushrooms: Heat olive oil and butter in a large skillet over medium heat. Add mushrooms, sauté for 5–6 minutes until browned.
  2. Add Garlic and Orzo: Stir in garlic, cook for 1 minute. Add orzo, cook for 1–2 minutes.
  3. Cook Orzo: Pour in broth, bring to a boil. Simmer for 8–10 minutes until orzo is tender.
  4. Finish Dish: Stir in cream, Parmesan, and spinach. Cook for 2–3 minutes until creamy. Season with salt, pepper, and red pepper flakes. Garnish with parsley.
