Orzo Pasta:
- 1 cup orzo pasta
Vegetables:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8 oz cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups baby spinach
Sauce and Seasoning:
- ½ cup grated Parmesan cheese
- ½ cup heavy cream
- 1 ½ cups low-sodium vegetable or chicken broth
- Salt and black pepper to taste
- ¼ teaspoon crushed red pepper flakes (optional)
Garnish:
- Chopped fresh parsley
Instructions
- Sauté Mushrooms: Heat olive oil and butter in a large skillet over medium heat. Add mushrooms, sauté for 5–6 minutes until browned.
- Add Garlic and Orzo: Stir in garlic, cook for 1 minute. Add orzo, cook for 1–2 minutes.
- Cook Orzo: Pour in broth, bring to a boil. Simmer for 8–10 minutes until orzo is tender.
- Finish Dish: Stir in cream, Parmesan, and spinach. Cook for 2–3 minutes until creamy. Season with salt, pepper, and red pepper flakes. Garnish with parsley.
