Description

Deliciously crispy and golden corn fritters made with fresh or frozen corn, seasoned with herbs and spices, and lightly fried to perfection. Perfect as an appetizer, snack, or side dish, these fritters offer a delightful crunch and a burst of flavor with every bite.

Ingredients

Scale

Main Ingredients

  • 1 1/2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal (optional for extra crispiness)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional for extra flavor)
  • 1/4 cup milk (or plant-based milk)
  • 1 egg, lightly beaten
  • 2 green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup shredded cheese (optional, for added flavor)
  • Vegetable oil, for frying

Instructions

  1. Combine Dry Ingredients and Vegetables: In a large mixing bowl, mix together the flour, cornmeal (if using), baking powder, salt, pepper, and smoked paprika. Add the corn kernels, chopped green onions, parsley, and shredded cheese if desired. Toss well to coat all ingredients evenly with the dry mixture.
  2. Make the Batter: Stir in the milk and the lightly beaten egg to the dry mixture to form a thick batter. If the batter feels too thick and difficult to scoop, add a little extra milk incrementally until it reaches a scoopable, thick consistency.
  3. Heat Oil and Fry Fritters: Pour about 1/4 inch of vegetable oil into a large skillet and heat it over medium heat until hot. Using a spoon, drop spoonfuls of the batter into the skillet, flattening each slightly with the back of the spoon. Fry each fritter for approximately 2 to 3 minutes on each side or until they turn golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.
  4. Drain Excess Oil: Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain off any excess oil. Repeat the frying process with the remaining batter.
  5. Serve Hot: Serve the corn fritters immediately while hot, accompanied by your favorite dipping sauces such as sour cream, salsa, or sweet chili sauce for added flavor and enjoyment.

Notes

  • For extra crispiness, incorporating cornmeal is recommended but optional.
  • If using frozen corn, ensure it is fully thawed and drained before mixing into the batter.
  • Vegetable oil with a high smoke point works best for frying to achieve a perfect golden crust.
  • Adjust seasoning to taste; smoked paprika adds a subtle smoky note but can be omitted if unavailable.
  • These fritters can be kept warm in a low oven (around 200°F) while frying the remaining batches.
  • For a dairy-free version, substitute milk and cheese with plant-based alternatives.
