Ingredients
Scale
Chicken Schnitzel:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
Breading:
- 2 large eggs
- 2 tablespoons milk
- 2 cups plain breadcrumbs (or panko for extra crispiness)
- ½ cup grated Parmesan cheese (optional)
Other:
- vegetable oil for frying
- lemon wedges and fresh parsley for serving
Instructions
- Pound the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to about ¼-inch thickness using a meat mallet.
- Prepare Breading Station: In a shallow dish, mix the flour with garlic powder, paprika, salt, and pepper. In a second dish, whisk together the eggs and milk. In a third dish, combine breadcrumbs and Parmesan cheese if using.
- Bread the Chicken: Dredge each chicken breast first in the seasoned flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture, pressing lightly to help it adhere.
- Fry the Chicken: Heat about ½ inch of vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for 3–4 minutes per side until golden brown and cooked through.
- Serve: Transfer to a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and fresh parsley.
Notes
- For extra crispiness, use panko breadcrumbs and ensure the oil is hot enough before frying.
- Leftovers reheat well in the oven.
- Pair with mashed potatoes, cucumber salad, or potato salad for a classic meal.
