- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 1 package (8 oz) cream cheese (cubed)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream

- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp salt
Garnish (optional)
- 2 tbsp chopped green onions or cilantro
Instructions
- Combine Ingredients: Add the shredded chicken, diced tomatoes with green chilies (drained), cream cheese cubes, shredded cheddar, shredded Monterey Jack, sour cream, garlic powder, onion powder, chili powder, cumin, and salt into a 3–4 quart crock pot. Stir gently to combine the ingredients slightly without fully mixing.
- Cook the Dip: Cover the crock pot with its lid and set it to the low heat setting. Cook the mixture for 2 to 3 hours, stirring occasionally to ensure the cheese melts evenly and the dip becomes hot and creamy throughout.
- Final Stir and Garnish: Once the cheese is fully melted and the dip is thoroughly heated, give it a good stir to blend all ingredients smoothly. Garnish with chopped green onions or cilantro if desired.
- Serve Warm: Serve the dip warm alongside tortilla chips, crackers, or fresh vegetables for dipping. To keep the dip warm during the event, set the crock pot to the ‘warm’ setting.

- For an extra kick, add diced jalapeños or a splash of hot sauce to the dip before cooking.
