Description

This Crock Pot Chicken Nacho Dip is a creamy, cheesy Tex-Mex appetizer that’s perfect for parties and gatherings. Made with shredded chicken, diced tomatoes with green chilies, cream cheese, cheddar, Monterey Jack, and flavorful spices, it slowly cooks to a warm, melty dip that’s delicious served with tortilla chips or fresh veggies.

  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 1 package (8 oz) cream cheese (cubed)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream

Instructions

  1. Combine Ingredients: Add the shredded chicken, diced tomatoes with green chilies (drained), cream cheese cubes, shredded cheddar, shredded Monterey Jack, sour cream, garlic powder, onion powder, chili powder, cumin, and salt into a 3–4 quart crock pot. Stir gently to combine the ingredients slightly without fully mixing.
  2. Cook the Dip: Cover the crock pot with its lid and set it to the low heat setting. Cook the mixture for 2 to 3 hours, stirring occasionally to ensure the cheese melts evenly and the dip becomes hot and creamy throughout.
  3. Final Stir and Garnish: Once the cheese is fully melted and the dip is thoroughly heated, give it a good stir to blend all ingredients smoothly. Garnish with chopped green onions or cilantro if desired.
  4. Serve Warm: Serve the dip warm alongside tortilla chips, crackers, or fresh vegetables for dipping. To keep the dip warm during the event, set the crock pot to the ‘warm’ setting.
