Instructions
- Prepare the broth and spices: Add the brown sugar, fish sauce, star anise, cinnamon stick, cloves, sliced fresh ginger, beef broth, and water to the crockpot. Stir well to dissolve the brown sugar and prevent it from settling at the bottom. Cover and cook on low heat for 7 to 8 hours to allow the flavors to deeply infuse.
- Strain spices and add noodles and onion: Using a slotted spoon, carefully remove all the whole spices from the broth. Thinly slice the half white onion as fine as possible. Add the rice noodles and sliced onion into the crockpot and cook for an additional 10 minutes, letting the noodles soften perfectly in the broth.
- Prepare sirloin and garnishes: While the noodles cook, thinly slice the sirloin steak if not already shaved. Prepare your desired fresh garnishes such as green onions, lime wedges, bean sprouts, cilantro, jalapeño slices, sriracha, and basil. Once the noodles are tender, add the sirloin to the crockpot and cook for 1 to 2 minutes, just until the beef is perfectly tender and cooked through.
