Description

This Crockpot Pierogi Casserole with Sausage is a comforting and hearty slow cooker meal perfect for an easy dinner. Frozen pierogies layered with smoked sausage, a creamy mushroom-cheddar sauce, and flavorful spices come together in a cheesy, bubbling casserole that’s both satisfying and simple to prepare.

Ingredients

Scale

Ingredients

  • 1 (16-ounce) package frozen pierogies, any variety
  • 1 pound smoked sausage, sliced into rounds
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons butter
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: Spray the inside of your slow cooker with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Sauté Onion and Garlic: In a skillet over medium heat, melt the butter. Add the diced onion and minced garlic, cooking for 3–4 minutes until they are softened and fragrant.
  3. Cook the Sausage: Add the sliced smoked sausage to the skillet with the onion and garlic. Cook for another 2–3 minutes, allowing the sausage to brown lightly and release its flavor.
  4. Mix the Sauce: In a large bowl, combine the cream of mushroom soup, sour cream, shredded cheddar cheese, black pepper, and smoked paprika. Stir the mixture well until everything is fully incorporated.
  5. Layer the Casserole: Begin by layering half of the frozen pierogies on the bottom of the slow cooker. Top them with half of the cooked sausage mixture, followed by half of the creamy soup mixture. Repeat these layers with the remaining pierogies, sausage, and soup mixture.
  6. Cook: Cover the slow cooker and cook on low heat for 4 to 5 hours. The casserole should be heated through, bubbly, and the pierogies tender.
  7. Garnish and Serve: Once cooked, garnish with chopped fresh parsley if desired. Serve hot and enjoy your comforting pierogi casserole.

Notes

  • You can substitute kielbasa or turkey sausage for a lighter version of this dish.
  • Adding chopped bell peppers or mushrooms before layering enhances the flavor and adds extra veggies.
