Description

These Dried Beef Pickle Roll Ups are a quick and savory appetizer featuring creamy cream cheese, tangy baby dill pickles, and salty dried beef wrapped together for an easy, no-cook snack perfect for parties or a light bite.

Ingredients

Scale

Ingredients

  • 4 oz plain cream cheese, softened
  • 16 oz baby dill pickles
  • 5 oz container dried beef

Instructions

  1. Prepare Pickles: Drain all the juice from the baby dill pickles and place them in a bowl. Use a paper towel to gently pat off any excess moisture from the pickles to prevent sogginess when assembling.
  2. Spread Cream Cheese: Using a butterknife, take a small amount of softened cream cheese and spread it evenly across one side of a dried beef slice, ensuring the entire surface is coated to act as a ‘glue’ for rolling.
  3. Assemble Roll Ups: Place a baby dill pickle in the center of the cream cheese-coated dried beef slice. Gently roll both sides of the beef around the pickle, overlapping the edges to secure the roll with the cream cheese.
  4. Repeat & Serve: Continue the rolling process with remaining pickles and dried beef slices. Serve the roll ups whole or sliced in half using a serrated knife. They can be served immediately or stored in an airtight container in the refrigerator overnight.

Notes

  • Be sure to use plain cream cheese for the best flavor balance.
  • Removing excess pickle juice prevents the rolls from becoming soggy.
  • To make slicing easier, chill the roll ups before cutting.
  • These roll ups make excellent party appetizers or snacks.
