Blueberry Filling
- 2 pounds blueberries (fresh or frozen, no need to defrost)
- 1/2 cup sugar
- 1.5 tablespoons cornstarch
- 1/4 cup water (leave out if using frozen berries)
- Juice of 1/2 lemon
Topping
- 2 cups white flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 cups buttermilk
Instructions
- Prep: Preheat the oven to 350°F (175°C). Place the butter in a deep-dish 7×11 baking dish or a 9×13 pan if a deeper dish is unavailable. Put it in the oven and allow the butter to melt completely. Remove promptly once melted to avoid burning or splattering.
- Prepare berries: In a saucepan, combine blueberries, 1/2 cup sugar, cornstarch, water (only if using fresh berries), and lemon juice. Bring the mixture to a boil while stirring occasionally. Once boiling and sugar is dissolved, remove from heat and set aside.
- Prepare topping: In a medium mixing bowl, whisk together the flour, 1 cup sugar, baking soda, salt, and ground cinnamon. Add the buttermilk gradually, whisking continuously until the batter is smooth and free of lumps.
- Bake: Pour the hot blueberry filling evenly over the melted butter in the baking dish. Next, carefully pour the batter on top of the blueberries without stirring. Bake in the preheated oven for 40 to 45 minutes or until the topping is golden brown and set.
Notes
- Use fresh or frozen blueberries; no need to thaw frozen berries before use.
- If using frozen berries, omit the water in the filling to prevent excess liquid.
- Ensure butter is fully melted but not burned for the best flavor and texture.
- Do not stir after layering the topping on the blueberries to allow the batter to rise and form a fluffy top.
