Ingredients
Scale
Main Ingredients
- 1 lb ground beef (or turkey, or vegetarian option)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes (with juices)
- 4 cups chicken broth (or vegetable broth)
- 8 oz cream cheese, softened
Optional Toppings
- Shredded cheese
- Fresh cilantro
- Tortilla chips
- Sour cream or Greek yogurt
Instructions
- Brown the Meat: In a large pot over medium heat, brown the ground beef. Cook until no longer pink and drain any excess fat to keep the soup from being greasy.
- Sauté the Vegetables: Add the chopped onion and minced garlic to the pot with the browned meat. Cook for about 5 minutes, stirring occasionally, until the onion softens and becomes translucent.
- Add Seasonings and Tomatoes: Stir in the taco seasoning and the canned diced tomatoes along with their juices. Mix well to evenly distribute the flavors.
- Pour in the Broth: Pour in the chicken or vegetable broth and increase the heat to bring the mixture to a simmer. Let it simmer gently for about 10 minutes to meld the flavors together.
- Add Cream Cheese: Cut the softened cream cheese into chunks and add them to the soup. Stir continuously until the cream cheese fully melts and blends into the broth, giving the soup a rich and creamy consistency.
- Serve: Ladle the soup into bowls and top with your choice of shredded cheese, fresh cilantro, crunchy tortilla chips, and a dollop of sour cream or Greek yogurt. Serve hot and enjoy!
Notes
- For a vegetarian version, substitute ground beef with plant-based meat alternatives or beans.
- You can adjust the thickness of the soup by adding more or less broth.
- Use low-fat cream cheese for a lighter version without sacrificing creaminess.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month.
- Adding a squeeze of fresh lime juice before serving can brighten the flavors.
