Description

This Easy Garlic Mushroom Pasta is a comforting and flavorful Italian-inspired dish that’s perfect for cozy dinners. Featuring tender sautéed mushrooms in a creamy garlic sauce tossed with spaghetti or fettuccine, it’s a quick and satisfying vegetarian meal that comes together on the stovetop in just 30 minutes.

Ingredients

Scale

Pasta

  • 12 ounces spaghetti or fettuccine

Sauce

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 16 ounces cremini or white mushrooms, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or Italian seasoning
  • ¼ cup dry white wine or vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve ½ cup of the pasta cooking water before draining the pasta and setting it aside.
  2. Sauté Aromatics: In a large skillet over medium heat, warm the olive oil and butter. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
  3. Cook Mushrooms: Add the sliced mushrooms along with salt, black pepper, and dried thyme to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms are nicely browned and tender.
  4. Deglaze Pan: Pour in the dry white wine or vegetable broth to deglaze the pan, scraping the bottom to release any flavorful browned bits. Let it simmer for 2 to 3 minutes to reduce slightly.
  5. Add Cream and Cheese: Lower the heat to low and stir in the heavy cream and grated Parmesan cheese until the sauce becomes creamy and smooth.
  6. Toss Pasta with Sauce: Add the cooked pasta to the skillet, tossing to coat the noodles evenly with the creamy mushroom sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  7. Season and Garnish: Taste and adjust the seasoning as desired. Garnish with chopped fresh parsley and serve the pasta warm for a cozy meal.

Notes

  • For a vegan version, substitute heavy cream with plant-based cream alternatives and omit Parmesan or use a vegan cheese substitute.
  • Incorporate sautéed spinach or peas for added vegetables and nutrition.
  • This recipe works well with whole wheat or gluten-free pasta for different dietary preferences.
