Guacamole
- 2 ripe avocados, chopped
- Juice of remaining 1/2 large lime
- Salt to taste
Instructions
- Prepare Pico de Gallo: In a small bowl, mix the finely diced onion, diced Roma tomatoes, chopped cilantro, jalapeño pepper, and half of the lime juice. Stir everything together well and set aside to let flavors meld.
- Prepare Guacamole Base: In another small bowl, combine the chopped avocados with the remaining lime juice and add salt to taste. Mash or stir gently until combined but still chunky.
- Combine Guacamole and Pico de Gallo: Stir half of the prepared pico de gallo into the avocado mixture until thoroughly blended. Avoid over-mashing to maintain a chunky texture.
- Serve: Spoon the guacamole into a serving bowl and top with the remaining pico de gallo for extra color and flavor. Serve immediately with chips or as desired.
