Instructions
- Preheat and prepare pastry: Preheat your oven to 400°F (204°C) and line two baking sheets with parchment paper. Place one sheet of thawed puff pastry on a baking sheet, gently rolling it into a flat square, then cut it into six equal rectangles.
- Prepare strawberry filling: In a small bowl, whisk together the thick strawberry jam and cornstarch until smooth to create a filling that will hold together during baking.
- Fill and seal: Spoon about 1 ½ tablespoons of the jam mixture onto three of the rectangles, leaving a ½-inch border around each. In another bowl, whisk the egg with 1 tablespoon water to make an egg wash. Lightly brush the exposed edges of the rectangles without jam with the egg wash.
- Assemble strudels: Place the remaining three pastry rectangles over the jam-covered ones, pressing the edges to seal. Refrigerate the assembled strudels while you repeat the process with the other puff pastry sheet.
- Bake: Arrange all six strudels on one prepared baking sheet. Lightly brush the tops with egg wash, then bake in the preheated oven for 16 minutes or until they are puffed and golden brown. Allow them to cool on a wire rack until just warm.
- Make icing: In a small bowl, whisk the melted salted butter, powdered sugar, milk, and vanilla extract until smooth. Adjust milk quantity as needed for a drizzling consistency.
