Instructions
- Whisk the Eggs: In a bowl, whisk together the eggs, milk, ground cumin, salt, and pepper until well combined.
- Sauté the Veggies: Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking for 3-4 minutes until they soften.
- Add Spinach: Stir in the chopped spinach and cook for an additional 1-2 minutes until wilted.
- Cook the Eggs: Pour the egg mixture into the skillet with the vegetables and scramble them together. Cook for 4-5 minutes until the eggs are fully set and cooked through.
- Cool & Assemble: Allow the scrambled egg mixture to cool slightly. Lay out the tortillas and divide the filling evenly among them. Sprinkle shredded cheese on top of the filling.
- Wrap the Burritos: Roll up each tortilla tightly, folding in the sides to secure the filling inside.
- Freeze for Later: If preparing for freezer storage, wrap each burrito individually with plastic wrap or foil and place them in a freezer bag to store.
