  • 1 lb. thinly sliced deli roast beef
  • 6 (3/4-oz.) sharp provolone cheese slices

Onions & Butter

  • 6 tbsp. (3 oz.) unsalted butter, divided
  • 1 large (13 oz.) sweet onion, thinly sliced (about 3 cups)

Glaze & Seasonings

  • 1 1/2 tsp. light brown sugar
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. kosher salt
  • 2 1/2 tsp. fresh thyme leaves, divided
  • 1 tsp. minced garlic (from 1 medium garlic clove)

Au Jus

  • 1 cup beef broth
  • 1 tbsp. Worcestershire sauce


Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C) and lightly coat a 13 x 9-inch baking dish with cooking spray to prevent sticking.
  2. Slice Rolls: Using a serrated knife, carefully slice the rolls horizontally. Place the bottom halves of the rolls evenly in the prepared baking dish to form the slider base.
  3. Caramelize Onions: In a skillet over medium-high heat, melt 1 tablespoon of butter. Add the thinly sliced sweet onions and cook for about 2 minutes, then reduce the heat to medium-low. Continue cooking the onions, stirring occasionally, until they are golden brown and caramelized, approximately 15 minutes. Remove from heat and set aside.
  4. Assemble Sliders: Layer the thinly sliced roast beef over the bottom halves of the rolls in the baking dish. Top the beef with the sharp provolone cheese slices and then the caramelized onions. Cover with the top halves of the rolls to complete each slider.
  5. Prepare Butter Glaze: In a small saucepan, melt 4 tablespoons of butter with the light brown sugar over low heat, stirring until dissolved.
